Slow Cooker Cheesy Chicken & Broccoli
This savory recipe uses one of my favorite kitchen tools...the crockpot! My favorite thing about crockpot meals is that you can just ‘set it and forget it’ as you go about your busy day and then in 4-6 hours you will have a balanced meal with extra servings for the rest of the week.
This meal is also a great one as it uses mostly ‘staple’ foods with the base of the meal coming from my pantry. I’ll grab the veggies and chicken from the freezer that I always have on hand and will purchase the dairy ingredients the week of. Another awesome thing about this meal in particular is that you can make it your own based on what you have. You can do this by switching up the vegetables and you can also omit the chicken if you don’t have any, just reduce the broth slightly.
Ingredients:
4 boneless chicken breasts
14 oz can of cream of chicken soup
14 oz can of cheddar soup
14 oz chicken broth
1/2 tsp salt
1/2 tsp cajun seasoning
1/2 tsp garlic salt
1 cup sour cream
1 12 oz bag of frozen broccoli or four cups of broccoli florets, steamed
1 cup shredded cheddar cheese
Directions:
Spray crockpot with cooking spray and put cream of chicken soup, cheddar soup, chicken broth, and seasonings in the crockpot. Stir until smooth.
Place chicken breasts into the soup mixture in the crockpot.
Cover and cook on high for 3 hours or low for 4-6 hours.
In the last 30 minutes of cooking add in the sour cream, broccoli, and cheddar cheese.
Cook for another 30 minutes or until the broccoli is tender.
Cook rice on stovetop and then shred the chicken and serve!
Garnish with extra cheddar cheese to your taste preference!
This meal also tastes awesome leftover and can be used throughout the week!
