Simple PB Strawberry Smoothie

Many people are concerned about buying fresh produce because it might go bad before they use it up. We can meal plan and shop accordingly to help stop this but sometimes life just happens. Once my berries are starting turn I will prep them to put in the freezer to use another time. Freezing extras before they go bad is another great way to enjoy fruits and veggies ALL year round rather than just when they are in season!

Great news is that fruits and veggies can be stored frozen for a whole year. But FYI— due to changes during freezing they will be much softer when frozen and then thawed. One thing I always have frozen is bananas. They are great to have on hand for making a quick smoothie or in a loaf of banana bread when I have a little more time.

Smoothies or smoothie bowls are a great way to use those frozen fruits or veggies.  Here’s a quick smoothie recipe I love to have for an afternoon snack:

Ingredients: makes 1 serving

  • 1 cup 2% milk

  • 6 large frozen strawberries

  • 2 tbsp peanut butter

  • 1 frozen banana

Directions:

  • Place all ingredients in blender and blend until smooth.

  • Pour in a glass, sip, and enjoy!

You can also add things like oats, avocado, and greek yogurt depending on your taste preferences and how filling you would like this smoothie to be. If you’re using it as a meal, I’d definitely consider upping the ingredients.
